Get a taste of life at the Ashbridge Estate with this butter tart recipe we found in the Ashbridge Estate archives. It’s from the Chalmer’s Guild Goodies cookbook, compiled by community members of the Chalmer’s United Church Guild in Guelph. The book was most likely purchased by Betty Ashbridge Burton in the 1960s after moving from Toronto to Guelph following her marriage.
½ cup seedless raisins
¼ cup butter
½ cup packed brown sugar
¼ teaspoon salt
½ cup golden corn syrup
1 egg
1 teaspoon vanilla
Pour boiling water over the raisins. Let them stand for 4-5 minutes. Mix the remaining ingredients together and add to the warm, drained raisins (do not dry). Put the filling into medium-sized unbaked tart shells. Bake for 15-20 minutes at 450°F. When done, the filling will be lightly browned and still bubbling.
